Blueberry, pear, and greens salad

If the "I wish it was summer" soup I shared yesterday has already got you in the mood for warm weather (or celebration of it if you live in the south), here's a sweet and delicious salad to compliment that soup or eat alone as it's an easy to throw together and flavorful salad.






Ingredients:
(adjust quantities to suit your serving size)

Mixed greens, washed, dried, and chopped (try kale, swiss chard, spinach.. whatever is in season)

olive oil

balsamic vinegar

1 pear, chopped

handful of sunflower seeds

handful dried blueberries


Directions:

Put mixed greens into a large bowl. Drizzle some olive oil on them and mix well with your hands or a  set of wooden salad tongs to coat each and every leaf in oil. Amount of olive should be just enough to cover each leaf without them being drenched. Drizzle some balsamic over top (a little less than the amount of oil used) and continue to mix. Toss in the chopped pear, sunflower seeds, and dried blueberries (adjust quantities if necessary to suit your needs).
