Strawberry shortcake overnight smoothie

This delicious smoothie recipe was taken from the blog Running with Spoons. It is so thick and creamy it may as well be dessert, but the best part about it is that EVERYTHING in it is good for you! Much healthier than an actual milkshake or ice cream treat :). With just a few simple ingredients, this recipe involves a small amount of prepping the night before, and after allowing the mixture to thicken for 3+ hours, it's all set and ready for the final blend. This recipe makes 1 serving.

Ingredients:

⅓ cup of almond milk
⅓ cup of rolled oats
½ tablespoon of natural almond butter
½-1 tablespoon of maple syrup depending on how sweet you want it
½ teaspoon of vanilla extract
pinch of salt
1 cup of frozen strawberries

Directions:

The night before, hand mix all of the ingredients except the strawberries until well blended and let sit in the fridge for at least 3 hours (overnight is best). The next morning, remove mixture from fridge and blend in a blender with frozen strawberries until smooth and creamy. Add more milk if the smoothie is too thick. Serve in a bowl or glass and top with fresh strawberries or other fruit, seeds and nuts (optional). Enjoy!
