This awesome and easy recipe was shared with me by my friend Dory! I am not sure of it's original source (but thankful for it!). We literally threw all the ingredients in the crockpot this morning, and by the time we were home from work dinner was ready! If you want something extremely quick and easy (and flavorful) give this a go!
Ingredients:
1 small onion, chopped
2 cloves of garlic, minced
2 cups of frozen peas (we didn't have any so we used green beans- worked great!)
9 oz can of tomato paste (sub for tomato sauce if you don't have any)
1 can of chick peas
14.5 oz can of tomato sauce
13.5 oz can of coconut milk or coconut cream (we used cream and it came out thick and yummy!)
3 tablespoons of local honey
2 tablespoons of curry powder
1 teaspoon of salt
1 teaspoon of crushed red pepper flakes
Directions:
Throw everything in your crockpot, set on low. Stir it a bit and leave it alone for 6-8 hours and wallah!
For future meal prepping, put all ingredients in a ziplock bag or sealable storage food container and freeze. Move to refrigerator the night before you're planning on making. In the morning, toss is all in the crockpot and there ya go!
