Apple peanut butter cookies

This recipe, originally butterscotch apple cookies was taken from my quick and easy vegan cookbook. The peanut butter chips that I listed in this recipe can be switched back to butterscotch chips to make the cookies the recipe originally intended, chocolate chips, vanilla chips (just make sure they're vegan!), or actual peanut butter or almond butter if you don't have any chips at all. You can also add your favorite vegan candy or whatever you'd like. The cookies are soft and moist and pleasantly delicious with the taste of apple.





Ingredients:

½ cup of vegan butter (I always use earth balance)

¼ cup of applesauce

1 tablespoons maple syrup

½ cup of powdered sugar

1 teaspoon of vanilla extract

1 teaspoon of ground cinnamon

¼ teaspoon of salt

1 ½ cups of whole wheat flour, or gluten free flour if needed

½ cup of vegan peanut butter chips (try Trader Joe's)
(can be subbed for actual peanut butter)

½ cup of chopped apple


Instructions:

Preheat oven to 375 degrees. Throw everything in a food processor or electric mixer and mix well (add chips in last if you want them to stay in tact). Mix well by hand (by mixing wet ingredients first and gradually adding in dry ingredients) if you don't have a food processor or mixer. Blend until smooth dough consistency.

Arrange 1 inch balls of dough onto ungreased baking sheet.

Bake for 10-12 minutes until golden brown. Sprinkle additional powdered sugar on top of cookies if desired. Once cooled, enjoy!
