This tasty treasure was taken from the EarthBalance website. Pair it with mashed potatoes, top it on seitan, tofu or tempe (any of your vegan meaty types), add it on a veggie burger and more.. the possibilities are endless. This is a great recipe to incorporate into your holiday dinners as it's so filling and savory it's perfect for those warm comfort foods and family meals. It's amazing how great it tastes without the animal fat or broth. Enjoy!
Ingredients:
1 teaspoon of Earth Balance or olive oil
1 clove of garlic
¼ cup of chopped onion
1 cup of chopped mushrooms
another 3 tablespoons of Earth Balance or oil
½ cup of whole wheat flour
2 cups of unsweetened soy or almond milk
½ cup of water
½ teaspoon of salt
¼ teaspoon of black pepper
Directions:
In a small skillet melt 1 tablespoon of butter or oil and sauté the onions, garlic and mushrooms. Cook for 6-8 minutes until soft and browned. Set aside.
In a sauce pan, melt 3 tablespoons of earth balance or oil on medium-low heat and add in flour. Saute flour for 5-10 minutes to allow it to thicken. Slowly add in milk and water, and whisk while you add it to prevent lumps from forming. Once it's smooth and well blended add in mushroom mixture. Add salt and pepper to taste and enjoy!
