Simple Bruschetta

If you enjoy bruschetta, this is a really quick version that is tasty and a good appetizer while waiting for a meal to bake in the oven (since it does require use of a preheated oven.. but only for five minutes.. may as well stick it in there while something else is baking!). This recipe serves 2, so double the recipe for every additional 2 people you wish to feed.




Ingredients:

2 slices of bread of your choice; you may choose a fancy bread, I chose Ezekiel sprouted whole grain bread because it's wholesome, minimally processed and high in protein

olive oil

fresh garlic or garlic paste from Trader Joes

one fresh tomato

nutritional yeast

handful of fresh herbs such as basil, parsley, and oregano

Directions:

Toast your slices of bread in a toaster on minimum setting, make sure they do not become hard or crunchy but soft and warm.



Drizzle some olive oil on each slice of toast, just enough to coat them. Don't worry if some goes through.

Spread on garlic evenly on top of each oily piece of toast, I prefer Trader Joe's garlic paste which can be spread on like butter, or you can dab on some minced or freshly chopped garlic in a thin layer.

Chop up tomato into thin slices, and layer them on over the garlic on each slice of bread until you've used the whole tomato.



Sprinkle some nutritional yeast on top of the tomatoes.

Wash, chop, and add herbs onto the tomatoes in a thin layer, as much or as little as you desire.



Bake in preheated oven for about 5 minutes if set at 400 degrees, and 7-8 minutes if set around 350.

Allow to cool and enjoy as an appetizer while you wait for the rest of your meal to be ready!
