This delicious chili like stew is easy and the perfect meal for fall. It's nutritious and combines the flavors of lots of vegetable flavors. Feel free to get creative and add any veggies that you'd like into this hearty stew! I love going to the farmers market, getting whatever is in season and throwing it in. For ease and convenience, canned ingredients can be used to make it a quicker process and is good for those that don't have the time to commit to having perishables around with such a busy schedule.
Ingredients:
1 onion
Small bunch of green onions
Tablespoon of garlic
Can of stewed tomatoes
Can of corn
Can of kidney beans
Can of pureed pumpkin, or about 1 can's worth of your own
Handful of small habanero peppers
Salt, pepper, chili pepper and additional garlic to taste
1 cup of vegetable broth (or more or less depending on consistency you prefer)
Directions:
Chop and sautee onions and green onions with tablespoon of garlic until golden brown. Add remaining ingredients, either straight from the can, or fresh and chopped and continue stirring on medium heat for about 20 minutes. Add vegetable broth to get the consistency you want in your stew, more for a thin soupy broth, or less for a thick stew. Serve hot with a ladle into individual bowls and enjoy!
