Vegan Apple Pie Cookies

I originally made these cookies last week but made them into peach cobbler/persimmon cookies and this week I made a batch that are definitely apple pie! You can swap the fruit topping out for any kind of fruit that you'd like to bake it atop a sugary and flaky cookie resembling the flavor of a mini pie. Very easy.. but a little crumbly. Enjoy!





Ingredients:

5 cups of whole wheat flour
1 cup of organic sugar
1 ½ cups of coconut oil
½- 1 teaspoon of salt
½ apple or fruit of your choice
homemade apple butter (optional)
cinnamon

Directions:

Preheat oven to 350 degrees.

Mix together flour, sugar, coconut oil, and salt in a large bowl. Add more oil or some water if dough is too dry, add a little more flour if too moist. It should be the right consistency to make round balls that still together.

Spray a cookie sheet and make 12 round balls, pressing each one flat onto the cookie sheet to make 12 flat cookies. If they are a little flaky that is fine, they will stick together better once cooked. Spoon a small amount of cookie butter into the center of each cookie if you desire.



Cut up an apple into small thin wedges, and stick them to the center of each cookie.



Sprinkle some cinnamon on top.



Bake at 350 degrees for 12-13 minutes.



Serve each cookie in a small bowl topped with dairy free vanilla ice cream (Try Coconut Bliss in vanilla island flavor, or So Delicious in Cashew Cream). Enjoy!
