Lentil Meatballs

I got this recipe from this new site I'm obsessed with... OneGreenPlanet.org. The original recipe is to make a meatless meatball-sub (mmmm delicious!) But we stopped before getting to the sub part so these could compliment the homemade vegan raviolis we were making. They made a delicious pair! This recipe is easy and pretty quick actually. Enjoy!





Ingredients:

- 2 cups of cooked lentils (which start out as 1 cup of uncooked lentils, boiled in water for about 15 minutes til soft)
- ½ cup of cut up onion, large pieces
- ¾ cloves of minced garlic, or 2 tablespoons of garlic paste
- 2 tablespoons of ground flaxseeds
- ⅓ cup of raw cashews
- ½ tablespoon of fresh thyme
- ½ teaspoon of fennel seeds, optional
- zest of 1 lemon, also optional




Instructions:

Preheat your oven to 350 degrees. Blend all of your ingredients together in a food processor. Form into balls with your hands and place onto a non-stick cooking pan, or sheet with coconut oil sprayed foil. Place the balls on the sheet and bake for 10 minutes. Rotate your pan and bake for another 5 minutes. Wallah, all done! Serve in a sandwich, or with pasta or these homemade raviolis :)
