Homemade Vegan Raviolis

I was so impressed that we actually made ravioli from scratch!!!! These seriously came out so amazing.. I can't even believe it. Being vegan makes it very hard to find any ravioli that doesn't have cheese in it, but here we were able to make our own vegan version with soy mozzarella cheese. The fun with these is you can literally fill them with whatever you want. The recipe that inspired me to make these originally called for a bean and plantain filling, but we had literally cooked up and ate our last plantain before I found this recipe, sadly. This original recipe has an awesome sauce/topping to it too, but we wanted to go the more traditional route tonight, by just doing "cheese"; but sprucing it up a bit with sautéed onions, spinach and garlic. The more I experiment with different filling I'll definitely post them on here if they come out good!! I was surprised at how easy these were to make. The process was definitely a fun bonding activity for my husband and I. Have fun with these and enjoy!







Ingredients:
(Yields about 10 large raviolis)

For the dough:
- 1 ⅔ cups of whole wheat flour
- ⅔ cup of water
- ½ teaspoon of salt
- 1 tablespoon of olive oil

For the filling:
- shredded soy cheese of your choice
- sauteed spinach and onion
- garlic powder

For the sauce:
- Bottle of vegan marinara sauce, or you can make your own with tomatoes, olive oil and veggies

Directions:

Mix all dough ingredients together with a fork and then start kneading with clean, flour covered hands. Knead well for about 10 minutes, adding water if dry and flour if wet. Allow dough to sit for 10 minutes.



Saute your veggies in a saucepan with olive oil or water.

Roll out dough as flat as you can.



Make individual circles about 4 inches in diameter. Put a pinch of cheese, and a small forkful of your veggies in each circle topped with some garlic powder, but leave enough of an edge to gently fold it in half and pinch your edges. If you plan on making raviolis a lot, you should consider getting these neato pastry making gadgets... the small one from this set it what I used to make ours! The larger ones can be used for calzones, empanadas, dumplings, and mini pies! So cool! If you are using the smallest one of these, use the bottom to cut a perfect circle in the flattened dough. Remove the circle and place on the opened press. Put your filling ingredients in the middle and press closed tightly.








You can remove any along the edge of the seal to make it look neater.



Once all your raviolis are made, you can boil a pot of water with a dash of salt and a drop of olive oil. When boiling, submerge the raviolis 5 at a time, cooking for 5 minutes.



Remove, and enjoy with your favorite marinara sauce, mmmmm! We ate ours complimented by these delicious lentil meatballs. Be prepared to become extremely full.. these raviolis are large and filling!
