Tofu in a carrot, orange ginger sauce

This recipe came out of one of my book sale finds, "Blissful Bites" by Christy Morgan. Tonight I literally opened the book and decided I would make whatever was on that page I opened to. This was pretty simple, but since I didn't allow the time for it to marinate over night, I just went with it the best I could so here is my version of tofu in a carrot, orange ginger sauce :)





Ingredients:

1 package of firm (or extra firm) tofu
handful of cilantro for garnishing

(Marinade)
½ cup of orange juice
1 tablespoon of soy sauce
3 tablespoons of cilantro
1 garlic clove (or 1 tablespoon of garlic paste)
1 teaspoon of ginger

(Sauce)
2 medium carrots, chopped
2 teaspoons of ginger
½ cup of orange juice

Drain tofu and cut into 8 equal pieces by cutting lengthwise into fours and then across the middle. Place in a dish with the marinade ingredients and allow to soak in the fridge overnight (turning over once at some point). If you are trying to make this NOW, you can skip this step (but your tofu won't be as enriched with the flavor throughout). My solution was to soak the tofu pieces in a pan on the stovetop on medium-low heat for about 15-20 minutes on each side in the marinade with a lid on the pan. If it starts to dry out too fast, turn down your heat to low. You'll see where it soaks up the marinade by changing color.

If your tofu was left to marinade overnight, place in a saucepan on the stove (with leftover marinade) on medium heat for a few minutes while you prepare your sauce. If you're sautéing your tofu in the marinade you can let it simmer while you prepare the sauce. Prepare the sauce by chopping up your carrots, and combining them in a food processor with the ginger and orange juice. Once the sauce is smooth in consistency, add to your tofu by saturating the surface of it. Cook for about 10 minutes on each side (mixing the sauce with the leftover marinade when you flip) on medium-low heat with a lid on your saucepan. Remove from saucepan to a serving dish and allow to cool before eating. Add extra cilantro on top for garnishment and enjoy!
