Lentil protein bars

Believe it or not.. these protein bars are amazing. They look kinda gross.. and to be honest they don't fully hold the "shape" of a protein "bar"... but their soft goodness can be eaten any way you want. Completely dairy, gluten and soy free. Sweet and filling, they are a great grab and go snack and entirely good for you!



Ingredients:

1 cup of lentils
2 tablespoons of maple syrup
1 cup of raisins
1 cup of almonds
1 tablespoon of coconut oil
3 tablespoons of hemp seeds/hearts
½ cup of water
Handful of berries or fruit of your choice (optional)


Directions:

Cook lentils in boiling water in a small pot until soft. Drain and add to food processor with all other ingredients. Blend well, and add water if mixture becomes too thick to blend. Once thoroughly mixed, prepare aluminum foil squares in desired protein bar sizes. Scoop spoonfuls of the mixture onto the center of each foil, and fold foil around it into a square and flatten into desired thickness. Put in refrigerator until use. Can also be scooped into small tupperwares and be eaten with a spoon. Great snacks to grab on the go; completely natural, good for you, packed with protein and tasty!!!! Delicious!
