VEGAN cream cheese & bagel w/ lox (smoked salmon)!!!

Yes it's true. There is a vegan alternative for smoked salmon. This is a dream come true for fish loving vegans everywhere, and for those allergic to seafood that only wish they could have some. It's more than perfect for a proud vegan jew like myself, who seriously misses some of the typical jewish  foods like bagels and lox. This crazy lox alternative is even cheaper than real Nova Scotia salmon, and it's more sustainable and of course, cruelty free. Made by "Sophie's Kitchen" brand from konjac root which is a superfood in Southeast Asia, it doesn't offer the protein of real salmon but it's completely guilt free and surprisingly tastes pretty damn close to the real thing! I was shocked. I suggest you give it a try if you can find it at your local health food store!!

Ingredients:

-1 vegan bagel (no egg or milk; check ingredients on package or ask if it's from a fresh bagel place to be sure it's vegan)

-Tofutti cream cheese

-1 package of Sophie's kitchen vegan smoked salmon

-Slice of tomato, onion, and lettuce (optional)

Directions:

Cut your bagel and toast to desired darkness. Spread with toffutti cream cheese and top with vegan smoked salmon! The salmon comes frozen, so make sure you thaw it out first or nuke in microwave for about 25 seconds. Add lettuce, tomato and onion if desired. Enjoy!
