Vegan BLT wrap

I made this for lunch today and it was DELICIOUS! It's very easy and better for you than 
a real BLT...




Ingredients (for each wrap):

1 whole wheat tortilla

4 strips of smoky tempeh strips
(look for this package in the store)

Handful of raw spinach, kale or lettuce

Handful of fresh cut tomatoes


Directions:

Remove tempeh from package and defrost in microwave for 30 seconds if frozen. Remove 4 strips and saute in sprayed saucepan on medium heat for a couple minutes on each size until darkened to your liking. While cooking, prepare the rest of the wrap. Lay out tortilla on a plate. Wash your greens and spread out a handful on the tortilla. 


Chop up tomato (I used a yellow one!) and spread out on top of greens. 


Once tempe is done cooking, lay on top of tomatoes. 


Attempt to wrap it up as tight as you can so everything will stay together and enjoy! 


Serve with a side dish of seasonal fruit for a complete meal.
