Spicy (sinus-clearing) coconut soup!

This "soup" is great as a soup, or as a sauce for rice. It's flavorful and spicy.. so if you don't do spices then make with caution! Some of these spicy additives can be taken out or toned down if you choose. This soup definitely cleared my sinuses.. at first, it was so hot that my septum felt like it was deteriorating from the heat... I had to tone this recipe down a bit to make it suitable for most people to tolerate. Any veggies can be added into this  soup or substituted for.


Ingredients:

4 cups of vegetable broth
1 can of coconut cream (get it at Trader Joe's!)- can be substituted for an additional can of coconut milk but the soup won't be as thick
3 cans (or approx. 14 ounce servings) of coconut milk
2 tablespoons of brown sugar
Juice of 1 lime
¼ cup of cilantro
Salt to taste
2 tablespoons of ginger
1 tablespoon of garlic paste or fresh garlic
1-2 tablespoons of turmeric or curry paste
1 jalapeƱo pepper

Optional (and recommended) ad ins:

broccoli
onions
tomatoes
mushrooms
tofu

1 package of rice if you choose to make your "soup" a full meal

Directions:

If you have a food processor, add in all of soup ingredients (do not include optional ad ins) and blend well. (If you don't, then just skip to next step). Pour into a large pot and cook on medium, stirring often. Add your veggies and cook until veggies are soft. Serve with a ladle into deep soup bowls and enjoy!

If you're making rice, cook your rice simultaneously so they will be done about the same time. Once finished, serve soup poured over a bowl of rice. Enjoy!
