Vegan beefy crumbles: burrito filling, or baked potato topper!

Tonight we made some delicious (vegan) beefy crumbles and other fun healthy additives to make burritos and loaded baked potatoes. Here is the recipe for cooking the beefy crumbles and instructions on how to make a burrito with them or a loaded baked potato.

Ingredients for beef filling/topping:

- Package of vegan beefy crumbles, many vegan companies make them and my favorite is "Beyond Meat" because they are not made of soy (like many other meat alternatives) but out of pea protein:



- Olive Oil
- Onion
- Ground black pepper
- Lemon juice
- Garlic
- Vegan Nacho Cheese:



Additional ingredients:

- Large haas avocado
- Can of pinto beans
- Jar of salsa
- Vegan plain soy yogurt

- Baked potatoes
- Tortilla wraps

Instructions:

Prepare your main component of your meal. If you are in the mood for baked potatoes, pop some in the microwave or oven and while cooking you can work on preparing the beef crumbles. If you want burritos, or even tacos, make sure you have tortillas or taco shells on hand.

Heat up a deep non-stick frying pan with just a dash of olive oil and fill with chopped onions. Allow the onions to simmer on both sides until golden brown, and then add half a package of frozen beefy crumbles to the pan. Cook throughly while adding a tablespoon of lemon juice, a tablespoon of fresh minced garlic or garlic paste, and a good sprinkle of black pepper. Chop up ¼ of a block of the vegan nacho cheese and put diced pieces into pan and allow to melt. Once mixture is well blended and cooked, transfer into serving bowl.



Prepare other additives to create a burrito or potato serving bar. Mash a large avocado, provide a bowl of beans, open a jar of salsa and get out the yogurt. Line up your ingredients to choose from and either pile them all high onto a fresh and warm baked potato or wrap within a tortilla for an overstuffed burrito. Enjoy!
