Strawberry, spinach and lime salad

Here's a fun, sweet and tangy salad that only takes a few minutes to make. Simple, quick, healthy and delicious- my favorite kind of recipe! I don't know about up north, but here in Florida, it's starting to feel like spring and the strawberries are in season.. this is the perfect salad for the occasion! If you're stuck in the cold... maybe this will help brighten your day :)




Ingredients (for each individual salad):

Large handful of fresh spinach leaves
5 fresh strawberries
⅛ (or less if you get bad heartburn like me!) of a sweet onion
¼ of a lime
Tablespoon of goat cheese (optional)

Directions:

Wash spinach and strawberries. Break apart spinach with your hands if leaves are large, if it's baby spinach leaves you can leave as is. Put in a small serving bowl. Chop up strawberries, discarding tops (or you can put into compost or feed to a pet!) and then adding slices to the salad. Dice onion, and add this as well. Squeeze quarter of lime on top of the salad and mix well. Sprinkle some goat cheese on top if you wish (try finding some local organic goat cheese from small scale farms to avoid supporting cruel factory farms). Enjoy!
