Joe's not so sloppy sandwich

Here are some amazinggggg sandwiches made with our leftover Sloppy Joes!! Josh made these... and I can't wait to eat mine for lunch tomorrow! They may contain some Sloppy Joe's.. but these sandwiches are not so sloppy. Just perfect and delicious. Here's a good idea to make with your leftovers if you've followed my post on how to make Vegan Sloppy Joe's.



Ingredients:

Leftover Sloppy Joe's
2 slices of sprouted wheat bread
Half of an avocado, mashed
Raw slices of onion ring
Small handful of fresh baby spinach

Directions:

Toast the bread if you prefer, or leave untoasted if you prefer your sandwich soft. Lay out one piece and spread some mashed avocado on it as flat as you can. Stick the spinach to it, followed by the onions. Slap on a big scoop of your leftover sloppy joe (best after it's been refrigerated or at least cooled down) but try to keep your scoop neat and on the sandwich so we can get away with saying this sandwich isn't too sloppy. Top it with the other slice of bread and press down to get it to stick. Wrap up the sandwich tightly and firmly with foil to keep it all together, and pack it up in your lunch for tomorrow!! Can be eaten cold or hot (I like it cold!) Yummmmmmmm :)
