Easy burrito bar

This is by far one of my favorite dinners and one of the easiest. Tonight I came home from Zumba and Josh had already prepared and set up this beautiful dinner. It's pretty easy and the time varies depending on what ingredients you want for your burritos. It's a great idea for parties with a lot of people.




Basically what all you need to do is prepare all your burrito toppings and serve in separate bowls, and provide everyone with a tortilla on a plate.

Here are some ideas for toppings:

-black beans, or any beans of your choice really, right out of a can is easiest
-mashed avocado
-sautéed onions
-salsa
-plain soy yogurt as a healthier alternative to sour cream
-canned corn
-meatless beefy crumbles/ground beed
-plantains (slice up and sauté until golden on each side)
-tempe (sauté with a little olive oil and spices)
-diced tomatoes
-pea or sunflower shoots
-seitan, sautéed in olive oil or soy sauce with spices
-butternut squash (dice and bake or sauté)
-vegan shredded cheese
-cous cous
-rice


And much much more.. get creative!

What all you have to do to make a burrito is drop your selected ingredients onto the tortilla, and roll and fold up the sides. Enjoy, and leftovers can be layered in a bowl or tupperware for an easy lunch the next day! They can be eaten without the tortilla as a meal, or even used a dip! The options are endless!
