Quick Collards - I don't have a creamed spinach recipe yet, but love making collard greens which are really quick and easy and will add a little green to your plate. The perfect southern green to add to your plate of comfort foods. You'll want to use your cornbread to sop up the extra sauce that puddles off the collards and onto your plate. Try using some leftover seitan broth to cook these in.
Green bean casserole - Instead of basic green beans, go all out and make a delicious casserole! For something simpler, just steam some fresh or frozen green beans and smother them in garlic!
Peach Cobbler - at the moment I do not have a baked apples recipe posted but I REALLY love this peach cobbler and it's a perfect dessert to all this amazing comfort food! Simply swap out peaches for apples for a pie more appropriate for fall.
