This delicious creamy avocado sauce pairs perfectly with fehttuchini or angel haired pasta. I've made other versions of creamy avocado dressing and sauces but nothing tasted so similar to alfredo before. This recipe is SO simple.. you literally blend up a few things together until smooth and creamy and then toss with cooked pasta. This recipe was adapted from a recipe in Angela Liddon's "Oh She Glows Cookbook".
Ingredients for avocado alfredo sauce:
2 ripe avocados
2-3 cloves of garlic
handful of basil leaves
5 teaspoons of lemon or lime juice
1 tablespoon of mild tasting vegetable oil (grapeseed, avocado, or sunflower)
1 teaspoon sea salt, or more to taste
freshly ground black pepper
1 cup water
Directions:
Blend everything together in a food processor or blender until smooth. Add more water to thin sauce out more if you'd like, and add more salt to taste. Toss with fresh cooked pasta and enjoy! Here you can see this tasty sauce tossed with some black rice soba noodles and topped with raw walnut balls... delicious!
