This delicious and bright pink smoothie bowl is inspired by a smoothie at the Good Karma Cafe in NOLA, that has a delicious array of plant based meals, a bunch of wholesome drinks and smoothies, and is also a yoga studio! The food from here Good Karma was one of my favorites from our trip to NOLA almost a year ago! Check out my blog post on traveling the NOLA area as a vegan tourist where we made the most of every plant based meal (or at least most of them) in the area! This smoothie makes me want to go back there more than anything in the world!
Ingredients (makes 2 smoothies):
1 small red beet
1 whole apple, chopped
1 chunk of fresh turmeric root
1/2-1 cup of frozen strawberries
1 cup frozen blueberries
Handful of frozen peaches, or 1 fresh peach chopped
1 frozen banana
1 handful walnuts
handful of frozen coconut chunks (optional)
Sweetener to taste (maple syrup, stevia or agave)
1-2 cups of juice of choice (I used part beet juice and part mixed antioxidant berry blend)
1-2 cups of almond or coconut milk, OR coconut water
Toppings, if eating as a smoothie bowl (optional): Chia seeds, coconut flakes, fresh chopped fruit, nuts, etc.
Directions:
Add all ingredients to a blender, followed by the liquid ingredients last. I filled the blender up to the top of the dry ingredients with a mixture of juices and milk. This is flexible and you can experiment with different juices, milks, or coconut water for different flavors. I think a mix of juice and milk gave it a mildly tart taste without being too overpowering. Use more liquids to thin out your smoothie if you want to drink it, or less to make it thicker for a smoothie bowl.
If drinking as smoothies, pour into glasses or jars and drink. If enjoying as smoothie bowls, pour into bowls and top with toppings of your choice! Enjoy :)
