This recipe was modified from the "Green protein bomb" smoothie recipe in my Vegan Smoothie book by Eliq Maranik. Who would have thought the celery sticks with almond butter you have eaten as a snack would taste so good in a smoothie? This smoothie is packed with potassium, vitamins C & A, calcium, and protein. Perfect to refuel after a workout, or an energizing way to start your day first thing in the morning, this green smoothie is delicious and amazing for you. This recipe makes 2 tasty super green smoothies.
Ingredients:
1 celery stalk, chopped
small handful of baby spinach, or 2 teaspoons of chlorella powder*
3 tablespoons of hemp, chia, and/or ground flax seeds
3 tablespoons of almond butter
3 tablespoons dried mulberries, or 1/2 cup of frozen berries of choice (I used blueberries)
1 1/4 non dairy milk- try almond, soy, coconut, flax or hemp
2 frozen bananas
sweetener such as agave, to taste (optional)
*Chlorella powder can be purchased in health food stores or online. It's a dense, dark green superfood powder similar to spirulina but has B12 in it which is something that's hard to find in plant based foods. Add a teaspoon or so to your morning smoothie every day to get a daily dose of B12, protein and phylonutrients (vitamins and minerals).
Directions:
Blend together everything except the bananas until smooth. Add the bananas and blend until smooth. Add more milk if a thinner consistency is desired, and add sweetener to taste.
