Happy New Year! Every year I make lengthy resolutions to try to better myself as a person and to make the time to overcommit to a million causes and different things (don't we all?).. and as you may suspect I usually fail at keeping them all. I'm a real person too and I often suck at trying to do too much.
Personal resolutions have ranged from drinking more water (depends on the day), to reading a chapter of a book of leisure each night before bed (quickly got replaced with Netflix/Firestick binging), to working out every day (depends on the week), to traveling more (yes but not as much as I'd like!) to spending every waking moment helping at my local animal shelter (depends on the month), to painting more (yes I did accomplish that one!), to finding a real job and career and figuring out what the hell I'm doing with my life long term? (still working on it..), blogging more (ehhh??), eating more wholesome foods (yes, after three years I've finally accomplished that), to attempting to do yoga (nope)--- and much more..... and only some of these have partially stuck (yoga just isn't happening for me). My most recent resolutions have actually been to stop over-committing just to undo all that I had done from previous new years. But all in all, the biggest and most life changing resolution I had ever made was to go vegan on January 1, 2015 and it's been the first that I have stuck with completely for the past three years and am SO grateful that I have. Not trying to be pushy, but if you're not an herbivore and becoming one was one of your goals for 2018, I'm glad you've found my blog so I can hopefully help get you going in the right direction. Even part time veganism can have a lesser impact on the planet, save the lives and minimize suffering of animals, and make you physically feel amazing. With vegan products on the market at just about every grocery store and meats, cheeses, milks, leather and more available in cruelty-free alternatives, there's no way you'll feel limited on a plant based diet/lifestyle. I try to stay healthy and wholesome but I still can't resist a large tub of Breyer's dairy-free cookie's n cream ice cream at Walmart for under $5. I'm thankful I live in a world where veganism is mainstream and I can get what I want and crave just like everyone else and don't feel like being a vegan has made me need to "give up" anything I love to eat.
My blog is full of vegan recipes, tips, and crunchy posts and ideas, but I admit I'm not the most organized at sharing my posts, or finding the best way to compile one single blog that encompasses everything I feel like writing about. Whether it be vegan food, insane stories about my long-living but now dead dog Alvin, random products I'm obsessed with and feel the need to share, a blurb about my custom pet portraits, or some rant about something on my mind that other tree hugging hippies can relate to, I kinda just type away and throw it all into one place. Most of my posts though revolve around vegan recipes that I originally started blogging about just for my own sanity, because whenever I find a recipe I love in a book or on a website I usually won't remember where I found it next time I need it. For my own poor memory and lack of organizational skills, my blog was born strictly for a form of self-reference, but also for those that asked me tips on going vegetarian or vegan. Back when I was living in Cape May NJ, I had crazy ideas always running through my mind and had a lot of free time on my hands. That was only a few years ago but I now feel old, busy and my mind's too exhausted to blog as often as I used to (maybe another resolution for this year?). Anyways, I promise to try to blog more, for vegan food recipes at least, even if it's as simplistic as the amazing rice paper bacon my husband and I made last week that I can't stop stuffing my face with (see my last post), or the beety lentil stew I had intended to post about right now before going on a new year's resolution rant instead (that will be my next post!). I try to keep my recipes simple-- plant based, but quick and easy when possible, because as much as I LOVE hanging out in my kitchen all day making intricate multi-step fancy foods, I do prefer something I can throw together in 20 minutes. If you're transitioning to veganism, my blog is great because the recipes I share are pretty wholesome and healthy, but also generally something that anyone would enjoy, regardless of being a vegan or not.
