Healthy baked potato wedges

These healthy fries are absolutely amazing.. and the best parts? They're very easy to make and pretty healthy for you! Just potatoes and a little oil and arrowroot.. no coating of flour, deep frying or extra added grease, yuck. The original recipe, taken from my favorite "Oh She Glows" cookbook utilizes yukon gold potatoes but we have made it with all kinds of white potatoes AND with sweets. Ingredients (to serve 2 as a side, I usually double triple, or quadruple this, because ya know, fries are delicious and addicting, why limit yourself?)

2 large potatoes (any variety)

1 tablespoon arrowroot powder

1 tablespoon grapeseed or olive oil

½ teaspoon sea salt

ground black pepper

optional seasonings: garlic powder, chili powder, cumin, etc.

Directions:

Preheat oven to 425 degrees F. Line a rimmed baking sheet with parchment paper or aluminum foil and coat with oil.

Quarter the potatoes lengthwise, and then cut each quarter into halves or thirds depending on how thick the potato is.

In a large ziplock or large bowl with a fitted lid, add potato wedges and arrowroot powder and shake to mix well. Drizzle on the oil and shake again until fully coated.

Place potatoes onto baking sheet making sure they don't touch. The more space in between them the crispier they'll be. Season with salt, pepper, and other seasonings of choice.

Bake for 15 minutes, flip, then bake for another 10-20 minutes to desired crispiness. They should appear golden and puffy. If using sweet potatoes, they may take longer to cook all the way through, so just keep adding 5 minutes at a time and checking on them until ready.

Serve and eat immediately, because sitting too long will result in them losing that delicious crispiness. They're so good why would you want to wait for the deliciousness anyway? Enjoy with a delicious healthy ketchup (try an organic variety without high fructose corn syrup), or a homemade vegan cheese sauce.
