
Ingredients:
2 cups of raw almonds, soaked for at least a few hours
2 cups filtered water
5 tablespoons carob or cacao powder
5 tablespoons agave
coconut oil (in solid state.. if liquid, stick in fridge a couple hours prior)
Directions:
After almonds are soaked, blend them together with water really well for several minutes. Strain the liquid through a nut bag or cheese cloth (and wallah-- you have homemade almond milk! Put aside and refrigerate for later, or enjoy with your raweos!)
Once all liquid is drained out and you have an almost dry almond meal, put dry almond meal into a bowl and mix by hand with a fork with your carob powder and agave. Mix well until you have a moist and pliable "dough". Form dough into round cookie shapes (or use a cookie cutter and use any shape you'd like!) and make sandwiches with solidified coconut oil in between. Once you've used up all the chocolatey dough and made it into cookies you're all done... you can now enjoy your raw and wholesome "raweos!" If you have issues like I did with consistency, play around with your ingredient ratios to try to get your dough to stick together better.
For fun variations, try making your own version with a different nut besides almonds, or even sunflower seeds as the base following the same instructions. You can add vanilla or other flavorings to your coconut oil "cream" to create different flavors!
