Recently when I was craving chocolate chip cookies, I didn't want to put in much time or effort.. I literally just wanted to eat delicious vegan cookies and as quickly as possible. I found this recipe and can vouch that it is indeed easy, fast, and the cookies were AMAZING. That perfect in-between of not too hard and not too soft and just moist enough that there's no need to spray your baking sheet. Ingredients:
2 ¼ cups flour (I always use whole wheat)
2 teaspoons baking powder
½ teaspoon salt
½-1 teaspoon of cinnamon (optional)
¾-1 cup of vegan dark chocolate chips
¾ cup raw sugar
½ cup oil or vegan butter (I prefer coconut oil or earth balance)
1 teaspoon vanilla
½ cup non-dairy milk OR water
Directions:
Preheat oven to 350 degrees F.
Mix everything together (I always do wet and dry separately and then combine them). Electric mixers are easiest, but you can also use a whisk or silicon spatula to mix by hand. Add chocolate chips last.
Add spoonfuls to an uncreased cookie sheet. The oil/butter in the cookies keeps them from burning so you don't need to grease your sheet. You should get between 12-24 cookies depending on the size of your scoops.
Bake for 10-18 mins depending on your oven (I baked for 10 and they were soft and gooey!) The cookies do not darken much so going by color won't be helpful- instead, check to see if they're just a little bit too soft for your liking, and then pull them out to cool (they'll harden more once they cool).
