VEGAN buffalo cauliflower wings and blue cheese crumbles

Delicious.  Your perfect vegan substitute for the buffalo boneless wings you've missed so much or are maybe afraid to let go of (limiting your ability to go vegan). Have no fear- these "wings" are cruelty free and wayyyy more delicious. Eat ten servings of these and feel no guilt. The blue cheese is so much like the real thing (but better in my opinion) I literally could eat all of it on its own out of the bowl I made it in. But it's the perfect compliment to the red hot spiciness of the buffalo sauce so I controlled myself to only eat it with the wings. You'll enjoy this one if you like buffalo sauce! Ingredients for the wings:

Olive oil spray
1 cup non-dairy milk
1 cup flour (chic pea is recommended to make it gluten free but since I didn't have any I used whole wheat- came out great!)
½ teaspoon garlic powder
½ teaspoon smoked paprika
1 large head of cauliflower chopped into florets

Ingredients for the buffalo sauce (if making from scratch-- You can also use pre-made store bought sauce that is vegan):

1 cup hot sauce
2 tablespoons tomato paste
1 tablespoon agave syrup
1 ½ tablespoons arrowroot powder OR cornstarch
½ teaspoon salt
black pepper to taste

Ingredients for blue cheese:

1 cup raw cashews
3 tablespoons lemon juice
1 tablespoon white miso
1 tablespoon ume plum/red wine/apple cider vinegar
1 teaspoon nutritional yeast
½ teaspoon salt
1 teaspoon dried marjoram (or a little less than 1 tsp of oregano if you don't have marjoram)
⅛ teaspoon kelp granules
⅛ teaspoon spirolina powder (or spinach powder) optional- just for color


Directions:

Preheat oven to 450 degrees F. Spray a baking sheet with olive oil.

Mix milk, flour, garlic powder and paprika together in a medium bowl. Dip each cauliflower floret in the batter until completely covered evenly and put on baking sheet. Once oven is preheated, bake for 20 minutes.

Mix together buffalo sauce ingredients in a small bowl and put aside.

Mix together all blue cheese ingredients EXCEPT the spirolina (if using). Blend in a food processor until smooth. Transfer to a medium bowl except for about 2 tablespoons of the cheese mixture. Flatten mixture that's in the bowl and smooth the surface. The 2 tablespoons left aside can be mixed by hand with the spirolina until a rich green color. Spread this green mixture over top of the first portion of the cheese mixture that is in the bowl without actually "mixing" the two layers together. Cut a butter knife into and through the cheese several times to create a marbled effect underneath. It's recommended to then place in fridge for about 3 hours to let the cheese dry out but ain't nobody got time for that, so I put it in the freezer for about 10-15 minutes while I finished everything else first.

Pull cauliflower wings out of the oven when finished and transfer to a serving dish. Drizzle the buffalo sauce all over to fully cover them. Pull out your blue cheese (I promise it's delicious even if not fully dried out) and spoon chunks of it over your cauliflower wings for serving. Enjoy!
