Tired of eating the same old greens? Here's a tasty way to add a kick of flavor to some greens but still keep them healthy (as long as you're using low-sodium options)! Recipe taken from "Unprocessed" by Chef AJ.
Ingredients:
2 bunches of collard greens (chop off stem and chop leaves into medium pieces)
½ large onion, chopped
1-2 tablespoons of jalapeños (optional)
3 cloves of fresh garlic, diced
1 cup of carrots, chopped
2 tablespoons of low sodium miso paste, dissolved in ¾ cup of water
A drizzle of low sodium tamari/liquid aminos/soy sauce (optional)
Directions:
Over medium heat, water sauté the garlic, onions, and jalapeños until onions are translucent. Add carrots and sauté a few more minutes. Add miso and water mixture and stir frequently but allowing to thicken. Once miso thickens, place collards on top, cover, and turn down the heat. You can drizzle on some soy sauce on collards before covering. As leaves wilt, stir everything together and cook for another 5-10 minutes.
Cool and enjoy!
