Southern Style Collard Greens

This vegan version of southern style collard greens is delicious and easy to make... it will certainly make you WANT to eat your veggies and greens!





Ingredients:

olive oil
bunch of collard greens, chopped
½ can of diced tomatoes, juice included
½ an onion
1 tablespoon of garlic
salt and pepper to taste

Directions:

Sauté onion and garlic in oil in a large deep frying pan for a few minutes until golden and translucent. Add chopped collards, diced tomatoes and salt and pepper to your liking. Cover and allow collards to wilt. Mix well so all flavors are blended, and when the greens are well cooked and droopy (usually about 10 minutes) they are ready to serve.
