This wholesome and completely raw recipe makes a good balanced meal! It's completely unprocessed and is quick and easy to make. It's packed with protein and nutrients! This is one of many awesome raw recipes from "The Un Cook Book" by Elizabeth Baker. If you're considering going raw, I highly encourage a raw or unprocessed book to help guide you through transforming your diet. We try to eat raw a few times a week, and eventually I would love to be completely raw. I love this book!
Ingredients:
4 bell peppers, tops cut off and seeds removed
1 mashed avocado OR ½ cup of nut or seed butter of choice
¼ cup of chopped celery
1 medium beet, carrot, parsnip or turnip shredded (or do what I did and juice it, which makes a great side to this meal, and then use the pulp that remains for this recipe)
1-2 teaspoons kelp
1 tablespoon chopped parsley
2 tablespoons of sunflower seeds
Directions:
Mix everything together except the bell peppers. (Peppers can be steamed for 3 minutes before-hand to soften if you choose). Add the filling inside each pepper and top with your favorite healthy sauce or dressing if you desire a little extra flavor. I served mine with a side of raw slivers of sweet parsnip. Enjoy!
