Not only does this light appetizer/snack make a beautiful presentation, but it's raw, healthy, and mighty tasty! I got the recipe from Team Beach Body. These were a lot of fun to put together and make! You can get really creative with the presentation of these. :) They are not extremely filling though, so they are good for a snack in between meals or leading up to a meal. Enjoy!
Ingredients:
1 Avocado, skin and pit removed and cut into chunks
¼ cup fresh basil
1 clove of garlic, chopped
2 teaspoons lime juice
salt and pepper to taste
1-2 large cucumbers
toothpicks (optional, just if needed)
paprika (for garnishment, optional)
a few whole basil leaves (for garnishment, optional)
Instructions:
Put avocado, basil, garlic and lime juice in a food processor and blend together. Season with salt and pepper if you desire. Set aside.
Use a vegetable peeler to peel long and thin slices of the cucumber.
Spread guac mixture onto each cucumber slice and roll each slice gently around the filling. Secure with a toothpick if you wish (I didn't need to).
Garnish with paprika and basil leaves if you desire. Enjoy!
