Another convenient pasta recipe if you're looking some something quick and easy, but wanting to experiment with and try new sauces. If you like hummus then you'll LOVE this one. Another great recipe by Robin Robertson's "One-Dish Vegan".
Ingredients:
8-12 oz of uncooked pasta
3 cups of broccoli florets
1 tablespoon of olive oil
5 garlic cloves
1 can of chickpeas rinsed and drained
¾ cup of hot vegetable broth
2 tablespoons of lemon juice
2 tablespoons of nutritional yeast OR 1 tablespoon of white miso paste
½ - 1 teaspoon of smoked paprika
½ teaspoon of oregano
½ teaspoon of basil
¼ teaspoon of black pepper
salt to taste
Ingredients:
Cook pasta in a large pot of boiling water with salt. 5 minutes before it's fully cooked add the broccoli. When all is cooked, drain water and keep pasta and broccoli in the pot.
Sauté garlic in olive oil for about a minute until soft. Add to a food processor with all remaining ingredients. Process until smooth. Pour sauce over pasta and broccoli and toss to combine.
