Pasta & broccoli with almond herb sauce

This interesting recipe was taken from the book "One-Dish Vegan" by Robin Robertson. I had to try it because it's diverse, and it came out surprisingly tasty. If you're a pasta lover but looking for something new to try, give this a shot!





Ingredients:

1 package of pasta, gluten free if needed

2-3 cups of broccoli florets

1 tablespoon of oil

1 onion, chopped

3 garlic cloves, chopped

1 can of white beans, rinsed and drained

2-3 tablespoons of almond butter

½ teaspoon of salt

black pepper to taste

1 cup of hot veggie broth

½ cup chopped basil

up to 1 tablespoon of tarragon

1 tablespoon of chopped parsley

1 tablespoon of chopped chives

1 teaspoon minced thyme

2 tablespoon of sliced almonds for garnish


Directions:

Cook the pasta according to package instructions. About 5 minutes before it's done, add the broccoli. Once done, drain and place in large serving bowl.

Heat oil in a frying pan and sautee onion and garlic until golden brown, about 5 minutes. Add the beans, almond butter, salt and pepper and stir to blend flavors together. Transfer the mixture to a food processor and process together with broth and herbs and puree until smooth and creamy.

Pour the sauce onto the pasta and mix together well. Garnish with sliced almonds, and additional herb leaves if you'd like. Enjoy!
