Yum, YUm, YUM!! This vegan pizza was inspired by my most favored
cookbook, and I hope by sharing this delicious inspiration, people will realize that it's possible to be vegan and not have to actually "give anything up". Just an FYI, the most common reason people tell me they personally could not ever go vegan is because they love cheese too much... well honey, I can attest to the fact I was the freakin' QUEEN of cheese back in my animal-product eating days.. as a kid I refused to eat ANYTHING unless it was smothered in cheese or simply was just cheese and nothing else. It took 24 years of eating animal products to learn that it is indeed possible to live without them, and look at me now. I'm eating basically everything the animal-eaters eat, but with a compassionate touch. Pizza is possible for vegans too :) (and I personally think it's way more delicious knowing you're eating something wholesome, tasty AND cruelty-free :D)
Ingredients:

vegan pizza crust
½ a batch of
roasted garlic white sauce
Several tablespoons of marinara sauce or canned plum tomatoes
Handful of spinach
Can or artichokes or handful of frozen artichokes
Extra virgin olive oil
Nutritional yeast (optional)
Directions:
Preheat oven to 475 degrees F. Spread pizza crust out on a floured pizza pan. Spread white sauce on crust to entirely cover the pizza but leave a ½ -1 inch crust around edges.
Use a spoon to drop dollops of plum tomatoes or marinara sauce all over the pizza.
Sauté artichokes and spinach in a saucepan with 2 tablespoons of water until soft and wilted. (Add garlic powder, salt, and mixed seasoning to add some extra flavor.) Spread artichokes and spinach around on the pizza.
Sprinkle some nutritional yeast over top the pizza if you choose to.
Bake for 10-12 minutes until the crust has risen and is slightly golden. Cut into slices and enjoy!
