The ultimate vegan sandwich: Avocado, sautéed mushrooms & onions with sunflower cheddar on sprouted rye

Josh made us these delicious filling sandwiches for lunch today, and not only are these sandwiches packed with protein, but will leave you thinking about their amazing taste long after they have satisfied you.




Ingredients 
(to make 2 sandwiches):

4 slices of sprouted rye toast

Earth balance or another vegan butter of choice

olive oil

Handful of fresh mushrooms, chopped

½ of an onion, diced

½ of a ripe avocado



Directions:

Sauté the chopped mushrooms and onions in olive oil on medium heat until perfectly golden browned.



Toast each slice of rye, smother each with vegan butter on one side and simmer in a saucepan with the buttered side down until golden browned.

Once toast has been browned, put buttered sides down on a plate. Smother 2 of the slices with sunflower cheddar spread thick, and spread the other 2 slices with the ripe avocado. Add a heaping spoonful of the mushroom and onion mixture onto each cheddar slice and top with the avocado slices.
