Gluten free peanut butter cookies

Delicious, soft, and gluten free... what more could you ask for in a batch of easy to make vegan cookies?



Ingredients:

¼ cup of vegan butter or coconut oil

½ cup of maple syrup

⅓ cup of unsweetened applesauce

1 flax egg (1 tablespoon of flax meal combined with 3 tablespoons of water and refrigerated for 10 minutes)

1 teaspoon of vanilla extract

½ cup of peanut butter

¾ cup of almond flour (or another type of gluten free flour)

¾ cup of brown rice flour (or another type of gluten free flour)

1 teaspoon of baking powder

1 teaspoon of baking soda

2 teaspoons of flax meal

¼ teaspoon of sea salt

1 teaspoon of arrowroot powder

½ cup of vegan chocolate chips (optional)


Directions:

Preheat oven to 350 degrees. Line two cookie sheets with parchment paper.

Mix together the vegan butter/coconut oil, maple syrup, and applesauce with a mixer or by hand. Add in all the remaining wet ingredients (including the flax egg) and mix well. Gradually add each dry ingredient and mix until combined smoothy.

Drop spoonfuls onto cookie sheet. Using wet fingers, or the bottom of a glass (wet with water) flatten the top of each cooke. Use a wet fork to press lightly in 2 directions making a grid on top of each cookie. Bake for 18-20 minutes until lightly browned. Remove and allow cookies to cool.
