Guess what the best thing about these truffles are? Besides being raw, and good for you! That they're surprisingly easy to make if you have the ingredients on hand. 15 minutes and you're done (10 of those minutes is literally letting some dates soak in water!). Rich and sweet, these truffles remind me of Godiva chocolates, and when I used to have a membership card that got me a tasty truffle for free each month. But guess what? These truffles have zero crap in them, and only healthy wholesome fats and proteins from nuts (not from processed sugars). The only sweetness here comes from wholesome dates. Bring these to a party or serve as a dessert next time you have guests.. no one will believe you they are good for you!
Ingredients:
1 cup of dates (remove the pits if they have them)
1 cup of raw unsalted cashews
⅓ cup raw cacao/cocoa powder (no sugars added), plus extra for coating
2 tablespoons crystalized ginger
1 tablespoons of cashew butter
Directions:
Let dates soak in water for 10 minutes. Drain water, and add dates and all other ingredients in a food processor. Blend together well. Use your hands to mold mixture into 1 inch round balls. If mixture is too dry, add a little more cashew butter and blend again. If too moist, add more cacao powder and blend again. After you mold each ball, coat in cacao powder and roll well between your palms. Arrange on a plate and refrigerate to allow them to firm up. Keep in fridge until ready to serve!
