Raw green manicotti

This gluten free, raw, vegan and WHOLESOME tasty manicotti alternative is ten times better without the heavy pasta or gross dairy to bring you down and make you feel ten pounds heavier. If you eat this you're actually likely to lose some weight because of how healthy it is for you. As I'm experimenting more with "raw" meals I'm shocked at how quickly I make them.. it seems like a lot of work but compared to conventional cooking the meal prep for a nutritious raw meal like this takes no time at all. Enjoy!



Ingredients:

A fresh batch of raw kale and spinach dip 

Large cabbage or kale leaves

Jar of vegan marinara sauce

Nutritional yeast (optional)


Directions:

Prepare your cheesy kale and spinach dip (click the link above, it's super easy, just throw ingredients in a food processor and blend together!).

Wash and dry your greens and cut off the stems so you have a large round leaf. Lay out on a plate and put a heaping spoonful of dip in the center. Roll up the leaf like a burrito. Make as many roll ups as desired and lay them next to each other on serving plate. Pour cold marinara sauce along the tops of them (the added weight will help keep them rolled up). Top with nutritional yeast if desired. Serve cold, and enjoy!!
