This dessert-like hummus is packed with the protein of a regular hummus but it's sweet pumpkin pie flavor makes it a delicious snack or dessert that can top sweet tortilla chips, be mixed with ice cream, be spread on toast or just be eaten by the spoonful. The best part is it's way healthier for you than actual pumpkin pie! I got the original recipe from
Food Faith Fitness, which also includes a recipe cinnamon sugar tortilla chips. I simply paired my hummus with Trader Joe's pumpkin tortilla chips instead.
Ingredients:
1 cup of chickpeas, drained and rinsed if from a can
¾ cup of pureed pumpkin (canned or
homemade)
¼ cup of maple syrup
2 teaspoon of pumpkin pie spice
2 teaspoon of coconut oil, liquid form
ground cinnamon to taste (and as garnishment on top), optional
Instructions:
Literally throw it all in a food processor and blend blend blend! Pair with tortilla chips or just eat it with a spoon. Who ever said you couldn't eat your "pumpkin pie" and be healthy too? Enjoy!
