This versatile vegan "cream" can be used as a vegan alternative to many creamy sauces. Just change up the ratios of ingredients, and add other herbs to give it a slightly different flavor. Used as is, it's a nice alternative to sour cream, and tastes great mixed in with mashed potatoes or added as a topping for a baked one. Makes a nice dip for fresh veggies too or a creamy base for potato or pasta salad. Add some more lemon and dill; makes a delicious sauce to compliment dishes like falafel, and be added to sandwiches and wraps. Ingredients:
½ package of silken or soft organic tofu
2 tablespoons of veganaise
1 tablespoon of lemon juice
1 tablespoon of soy sauce
a handful of fennel greens or dill (optional)
Directions:
Whip ingredients together in a food processor or blender. Add or adjust ingredient amounts to your personal liking. Enjoy!
