Blueberry oat bran muffins

Here are some delicious muffins that are a healthier alternative to dessert, or a good grab and go meal for breakfast in the morning. Overall, these muffins are a lower calorie, and less fattening muffin, while still being tasty, filling, and vegan of course! Quick and easy to make, you can't go wrong with these. Josh made these tonight.. and I can't wait to save some to eat for breakfast this week. This is a modified version of a recipe from Food.com. This recipe makes 12 muffins.






Ingredients:

2 cups of oat bran
¼ cup of brown sugar
2 teaspoons of baking powder
¼ teaspoon of sea salt
1 cup of soy or almond milk
2 flax eggs (2 tablespoons of ground flax seeds & 5 tablespoons of water)
¼ cup of molasses or honey (for the beegans)
2 tablespoons of applesauce
1 cup of fresh or frozen blueberries

Directions:

Combine your flax eggs ingredients in a small bowl and stick in the fridge for about 10 minutes.

Preheat oven to 425 degrees. Line a 12 muffin cup pan with baking cups or spray with cooking spray.

Combine all ingredients in a mixing bowl and mix well. Add flax egg once it had time to solidify, and mix in well.

Fill muffin cups until each is ¾ of the way full. Bake for 15-17 minutes until golden brown.
