So if you are Jewish and celebrate Passover, you know you can't eat bread or chametz at all. If you're vegetarian or vegan, it makes it far more difficult to eat healthy during the 8 days of Passover because whole grains may make up much of the plant based protein you may eat.
I searched online and found some tasty vegan passover recipes to try. Haven't had a chance to try them myself yet, but we are definitely planning on making them this week.
