Mmmm.. so during Passover when we were very limited on foods we were allowed to eat, I whipped up some of this mock chopped liver. I honestly don't know what chopped liver is supposed to taste like.. but I guarantee this is ten times better.. it's rich and full of flavor, making it the perfect side dish, spread or dip. Mushrooms are the main ingredients, and did you realize how many nutritional benefits mushrooms provide? Tons of B vitamins, low calories, plenty of necessary minerals, antioxidant packed, even D Vitamins, kind of meat textured and high on the fullness factor- you can't go wrong for snacking on these "fungi". If you're a vegetarian or vegan I highly suggest incorporating them into your diet for much needed nutrients and a great substitute in meat-like recipes. Here, these babies are blended with sautéed onions, cashews, olive oil and lemon juice making this recipe not only tasty but full of protein and actually pretty good for you. The recipe makes about 2 cups of this mock liver so feel free to double it or just wing your amounts based on what you have to make even more (that's what I did!) Enjoy!
Ingredients:
1 tablespoon of olive oil
about 1 ½ cups of chopped onions
2 cups of slices mushrooms (or about your average sized package) white, baby bella or cremini
¾ cup of cashews (roasted or regular)
1 tablespoon of lemon juice
salt and pepper, to taste
Instructions:
Sauté the chopped onions in the olive oil until they are golden browned, even slightly burnt is okay (if that's how you like them). Add your chopped mushrooms and allow them to warm until they start to wilt. If you're ratios of onions and mushrooms are slightly off or you make extra, the end result will still taste fine (my ratios were a bit different than the recipe called for and it was still delicious).
Combine the onions and mushrooms with the remaining ingredients in a food processor and blend until smooth (like a hummus-like consistency). Enjoy as a side dish, spread on a sandwich or dip for crackers or chips. I forgot to take a picture when I made it.. but it should look similar to hummus when you're done. Taste test and add more salt and pepper if necessary. Amazinggggg !
