Coconut French Toast

This amazing vegan french toast will knock your socks off. I paired a coconut derived ingredients together to create this french toast batter and it has created a phenomenal combination that both vegans and non-vegans will enjoy! It's very easy, and all of the ingredients are natural without extra additives (who needs those?). It's amazing how amazing natural food can be on its own! This is a great alternative for those that do not eat eggs (or even if you do and you're just out of eggs and craving some lovely french toast). You may never go back to the egg battered toast again after this. Enjoy <3

Ingredients:

¼ cup of organic coconut flour
1 cup of coconut milk (or any other non-dairy milk of your choice: soy, almond, cashew, rice, etc. but coconut tastes the best paired with the other ingredients!)
¼ teaspoon of cinnamon
¼ teaspoon of nutmeg
½ teaspoon of vanilla extract
coconut oil
6 slices of bread (try- natural sprouted bread; one of the best kinds of bread for you!)

Directions:

Combine coconut flour, milk, cinnamon, nutmeg, and vanilla in a bowl and whisk together well. Line a frying pan with coconut oil (a generous amount to cover the bottom of the pan) and turn heat on medium-low. One at a time, dip each slice of bread generously into the batter, covering it entirely by spreading the batter onto each side and allowing it to soak into the pores of the bread well. Once each slice is covered, put into the pan and allow to cook well on each side until golden brown. You will have to replace the coconut oil regularly as the bread soaks it up quickly. It should take about 3 minutes to cook each piece total, or until it looks well done. Turn down heat if oil begins splattering or pieces of batter begin blackening and burning in the pan (I had to clean the pan out a few times, or at least just scoop out the blackened chunks throughout the process). Once all slices are well coated and well cooked, place on serving plates, and drizzle on some maple syrup. You may also add powdered sugar if you would like, however this meal is very sweet on it's own! It almost tastes like there's sugar in it even though there isn't! You can also compliment with some vegan bacon or fruit on the side. Enjoy!
