If you're feeling a quick and sweet treat, this is one of my favorites.
Ingredients:
Sweet potato
Coconut oil (can be found at your local Trader Joe's or health food store)
Ground Cinnamon
Directions:
Cut a slit in the potato and cook in the microwave or oven. If you're trying to save time, microwave with the potato setting is fastest.
When done, open the slit and mash the inside up with a fork.
Add about a tablespoon of coconut oil, and continue to mash up. (Did you know that by having 2 tablespoons of coconut oil per day, it can improve your memory and even help cure those with Alzeimer's????)
Sprinkle on some cinnamon and mix it up more. (Cinnamon is good for lowering cholesterol and blood sugar levels in the body)

P.S. eating the skin is added fiber and super good for you. So eat every last bite!
