Samm's Slammin EP parm

Ingredients

2 medium sized eggplants

A handful of fresh or frozen basil

1 cup of fresh or frozen spinach

2 cups of vegan shredded cheese

A Vegan Vodka or Basil tomato sauce (I had originally made this recipe with vodka sauce that had dairy in it when I was vegetarian, but this can be subbed with marinara, or marinara with added vegan cheese, nutritional yeast, and/or vegan milk to make it more like a vodka sauce)


Directions

Preheat oven to 350 degrees.

While oven is heating, slice eggplant in very thin circular or half circle slices. Cook in non-stick frying pan with NO oil or spray, heat both sides until slightly brown and crispy.



Get out a good pyrex pan or casserole dish. Layer your sauce, then eggplant circles, then cheese, then basil and spinach 2-3 times until pan is filled.







Your top layer should be just sauce and cheese with a few basil leaves for decoration.



Bake in oven for 30-40 minutes, allow to cool and then ENJOY! :)
