Mexican Salad Recipe

Here's a quick, cheap, healthy and filling meal that is good alone, with some pita or chips, or in a wrap (making it a burrito). 



Here is the nutrition information per serving:

455 calories
12g fat
58g carbs
13g protein

+ TONS of vitamins, minerals, fiber & antioxidants

(Don't forget to add nutrition info from chips or wrap if you choose to add them to your meal)

Ingredients

1 can of corn
1 can of stewed tomatoes
1 can of black beans
1 large Florida Avocado
1 onion

Directions

Drain and empty contents of 3 cans into a large bowl. Chop up avocado into large chunks and add. Dice onion and add. Mix all together and enjoy :)

1/3 of the entire bowl = 1 serving size

How quick & easy was that?!

*Plain vegan yogurt can also be added as an excellent topping, and hot chili peppers may be added for an extra kick, however nutritional value is not included in above total
