Magical Nice Cream

Nice cream?! Magical?! WTF.

This "nice cream" is a completely wholesome and dairy-free alternative to ice cream. What makes it "nice" is that there are no animal products in it. Dairy not only doesn't agree with many people's digestive systems, but the industry of producing dairy on large scale factory farms is horrendously cruel to cows. This fruit based alternative is AMAZING and I promise it will satisfy as much as ice cream in a healthy kind of way. Healthy enough it could actually be a complete breakfast meal. I love eating smoothie bowls like this for breakfast, lunch, or dessert. Pretty magical, huh?

This purplely hued creamy smoothie bowl is so good and naturally sweet on it's own, and you can even get creative and top it with healthy and wholesome "toppings" too to make it even more filling. It's a great snack for kids-- just serve in a parfait glass layered with sliced bananas or other toppings that your kids like. I absolutely LOVE this tasty treat and I bet that you will too. Give it a try! Taken from Angela Liddon's Oh She Glows Every Day book.

Ingredients
(for 2 smoothie bowls):

1 cup and 2 tablespoons of unsweetened almond milk
1/2 cup frozen blueberries
2 large frozen bananas
1/4 cup avocado, optional if you don't have any
2 tablespoons almond butter
1 teaspoon pure vanilla extract
pinch of sea salt if almond butter is unsalted
1/8-1/4 teaspoon cinnamon, optional
2 ice cubes

Topping ideas:

sliced banana
hemp hearts
chia seeds
drizzled almond butter
coconut flakes
granola
chocolate chips

Directions:

Blend all ingredients together until smooth. Add more almond milk if you want to drink it as a smoothie instead of eat it as a smoothie bowl. If enjoying in a bowl, pour into bowls and add toppings. Enjoy!
