Sesame-Spirulina power bars

The thought of a seedy green "bar" to munch on as a tasty treat and source of quick healthy fuel may not sound all that enticing unless I tell you that this amazing rich green delicious goodness reminds me of a not so sickling sweet version of praline. It's a combo of salty and sweet, crunchy and creamy, kind of like a piece of chocolate bark or something... with wholesome seeds and nuts and rich flavor. A perfect dessert or on the go treat, I'm totally obsessed with this right now! Oh and if you're not familiar with spirulina, it's a super food cyanobacteria (algae) powder that's very high in protein, iron, calcium, antioxidants, B-vitamins and other nutrients. Basically, it's green magic and if you haven't already you've gotta try it. On it's own it doesn't taste especially great but mixed into other things you don't really notice it's flavor... just that beautiful, rich green color!




This simple raw recipe was taken from my obsession: "Rawsome", a raw recipe and resource book by Brigitte Mars.

Ingredients:

½ cup coconut oil
⅓ cup honey or agave
½ teaspoon sea salt
1 teaspoon vanilla extract
¼ cup spirulina powder
¾ cup raw sesame seeds (unhulled, any color)
¾ cup pine nuts

Directions:

Combine everything in a bowl and mix thoroughly. Feel free to adjust the ratio of honey/agave to salt based on how sweet and salty you want it to be (taste test!). Press mix into a 8x10" glass pan (or a dish that's equivalent-- something smaller will mean thicker pieces). Refrigerate for at least 1 hour and cut into squares. Enjoy! Keep in mind because of the solidified coconut oil, this stuff has the potential to "melt" if left out in warm temperatures. If you plan to travel with it, keep in a cooler.
